The Start of Something New

THE PIZZA REVOLUTION BEGINS SPRING 2012!

For the last 23 years I have gone to school. That's twenty-three twenty seventh's (23/27) of my life. I value education, but not that much! So, as I continue to finish one chapter of my life (5 years dedicated to achieving a PhD), I am deciding to begin a new venture. And it involves dough.

It's time for something new. Why pizza? It's the dough that gets me. The soft, yet spongy, elastic feel, the the delicious aroma, the creamy smooth appearance. It's a bit of a love affair, a bit of obsession- to experiment with various flours, recipes, and technique in search of a "perfect" crust. And although I know "perfection" is relative in the pizza world, it's the mesmerizing process of making dough that draws me in.

So, simply put- I have decided to follow a "job" based on what I enjoy, what I have passion for. And it leaves me feeling fulfilled because the venture is fulfilling some of my closest values of adventuring, working for myself, and doing what I enjoy and believe in.

So, cooking pizza I shall do! This is spinning fresh dough in the air, music full-blast, good vibes- community-building, through serving others a basic necessity: GREAT PIZZA! No trashy, crappy Pizza Hut gross-ass sucky food. This will be beautiful, local, artisan, wood-fire-a-blazin', 900 degree bakin', good-for-your-soul deliciousness!
